This one is a twist on the regular elimination game.
Elimination games can be fun, and are fairly common. Whoever dies is out, and usually waits until the game is over- either because someone wins, or time runs out. Which is boring for those people who are eliminated early. Especially if the last two people are basically hiding and waiting on someone to pass by their position.
Zombies lets players who are, otherwise, out continue to play!
These players come back as Zombies and their goal is to kill everyone who isn't a zombie.
There should be something to easily identify someone as a zombie. An Armband, again, works perfectly.
There are many ways to handle Zombies:
Other than agreeing on how to mark Zombies, and how to kill them- along with how they respawn. Zombies is just a new way of playing Elimination.

More Advanced Zombies.
This is more like an endurance game. One person starts out as a Zombie. He cannot be killed until two or more other people are turned into Zombies (3+ Zombies total). Anyone the First Zombie kills becomes a Zombie. It's a game of everyone against the Zombies. Zombies should be made to wait at the spawn point no more than three minutes before they automatically respawn.
The point of the game is to stay within a designated area, and last out a period of time. If at any time there are no players left, who aren't Zombies, the Zombies win. Otherwise, at the end of the allotted time period all non-Zombie players are winners.
Zombies should respawn quickly; the point of the game is to outlast constant waves of enemies. The game should probably only last about 30 minutes to an hour. There should be clear and defined boundaries- the longer the game, the bigger the area. Anyone who goes out of bounds is out and becomes a Zombie player automatically.
